Ingredients
4 boneless, skinless chicken breast halves, cubed
1 small onion, chopped
1 tbsp olive oil
1 can (49-1/2 oz) chicken broth
1 can (15 oz) diced tomatoes
1 can (4 oz) chopped green chiles, drained
1/4 cup parsley
1/2 tsp red pepper flakes
1/2 tsp chili powder
1/2 tsp ground cumin
Tortilla chips
Shredded cheddar cheese
Directions
Sauté chicken and onion in olive oil until no longer pink. Add chicken broth, chiles, tomatoes and seasonings. Bring to a boil. Simmer 30 minutes. Crumble chips in the bottom of soup bowls. Ladle soup over chips. Sprinkle with cheese.
